About Our

History

Since 1850

Oldest Wine Bar in Virginia

Our Capstone Flavor journey began in 1850. A family grill’s operations that evolved into a marvelous food brand that preserved traditional recipes and introduced modern food innovations.

After five generations of passionate restaurateurs, the family-owned business offers unrivaled service which blended with gracious hospitality ensures first-class culinary experience alongside superb grilled creations.

As we celebrate our 175 years journey, we continue inviting our guests to be part of the story that blends traditional ways with modern innovative techniques.

175 years later

of quality service and dedication

The simple takeaway grill became a place that serves as an essential culinary place in the community. We maintain an unyielding commitment both to traditional values and quality excellence during five evolutionary periods of technology alongside shifts in food preferences. We maintain acknowledgment for our legacy by using both ancient food methods with advanced equipment to deliver premium culinary experiences to our dining customers. The core values of Capstone Flavor have persisted since 1850 to unite customers through their perfect food preparation paired with sincere hospitality.

Timeline

1850

Our culinary journey begins when Giovanni Capstone opens a small roadside grill in the middle of the city. He services deliciously simple charcoal grill meat to travelers and local starte.

1903

The business expands to its first formal restaurant location under the leadership of second generation owner, Maria Capstone, where the cherished marinda recipes, which would become the beloved hallmark for many generations, are first introduced.

1967

CapstoneFlavor welcomes change as Antonio Capstone introduces new international dishes in traditional grilling format on the menu while launching the company’s second branch.

1989

With James and Sofia Capstone, fourth generation restaurateurs, branching out to three more metropolitan locations, the brand turns into a regional favorite. They also introduced customer favorite sharing boards.

2003

CapstoneFlavor keeps growing under the current owner Marco Capstone, improving our signature recipes and broadning our menu, while enduring the family’s dedication to quality ingredients and servicing exceptional food.

Today

The complete restaurant management system developed by us now integrates all five branches. It provides clients with online reservations including table visualization, mobile ordering, staff scheduling, as well as geolocation services. This is the first time we have combined computerized reservation with inventory systems while maintaining our traditional recipes that have served our customers for 175 years.
